Over the weekend, friends came over for dinner. I made hot pot. Hot pot is a simmering pot of stock placed on a dinner table while ingredients are added in. I first cooked 2 pots of stock, one chicken and the other ribs. Meanwhile I cut up various vegetables, fish filet, tofu, etc.
When my guests arrived, I transferred both stock into a pot with a divider in the middle, one side non-spicy and the other with spicy hot pot paste. We made our own dipping sauce with sesame oil, scallion, cilantro, salt, sugar, and home made chili oil.
We sat around the hot pot, ‘cooking’, eating, chatting…
It felt so warm, not only the hot pot but also the chat with friends.
