Chinese Vegetable Soup is easy to make at home. In order to make a vegetable soup flavorful, I stir fry the vegetables first and get some char on them. Also, I add one teaspoon mushroom seasoning (“the secret seasoning”) to enhance the flavor. Enjoy!

Mushroom (Matsutake) Seasoning:

Ingredients:
4 fresh or dry shiitake mushrooms, sliced
4 cups of Napa cabbage, sliced
1/2 onion, sliced
1/2 carrot, sliced
2 eggs, beaten
3 cloves garlic, sliced
Salt
White pepper
Avocado or vegetable oil
Sesame oil
Mushroom seasoning
Written recipe for Shrimp Chow Mein:
1. Heat up the oil to medium high, and make scrambled eggs. When it’s done, set aside.
2. Add more oil in the pan and stir fry garlic and onions for about 1 minute.
2. Add carrot and mushroom and stir fry about 1 minute.
3. Add 4 cups water and bring to boil. Season the soup with salt and mushroom seasoning.
4. Turn the heat down to medium low and cook about 3 minutes.
5. Add Napa cabbage and cook about 3 to 5 minutes.
6. Add the eggs back and mix.
7. Finish with white pepper, green onions and sesame oil. Serve!
