Winter Melon, also known as Winter Gourd, may only be found in some Asian markets. It can be used in stir- frys or soup. It’s also used to make winter melon candy often eaten for Chinese New Year or moon cake filling. This soup is very refreshing.
1/2 cup ham, diced
2 cups winter melon, peeled, seeds removed and diced
3 cups water (or stock)
2 green onions, chopped thinly
White pepper powder
Canola or vegetable oil
1. Heat up a deep pan to medium heat. Add 1 tablespoon oil, and sauté ham for 1 minute.
2. Add water. Turn up the heat to high, and cover till it boils.
3. Add winter melon in, and cook about 3 minutes.
4. Add green onions and mix up. Add salt and white pepper powder to taste. Serve.
