Steamed Pork Ribs with Rice Powder

Steamed Pork Ribs with Rice Powder is another classic Sichuan dish. It is both savory and sweet. While you may buy rice powder from an Asian store, making it at home is not hard. Enjoy!

1 pound pork ribs, cut into bite size
1 cup white rice
30 Sichuan peppercorns
1 tsp star anise seed powder
1 tbsp light soy sauce
1/2 tbsp dark soy sauce
1 tbsp spicy bean paste
1/2 tsp sugar
1/2 tsp salt
1 tsp grated or minced ginger

1. Soak ribs in cold water about 1 hour;
2. Strain the ribs, and Marinate with light soy sauce, dark soy sauce, spicy bean paste, sugar, and salt for 30 minutes to 1 hour;
3. Pan roast rice and Sichuan peppercorns on medium low heat for about 8 to 10 minutes until rice is lightly brown;
4. Process rice in a blender or food processor to coarse or fine powder, and add star anise seed powder to mix well;
5. In a bowl, place sweet potato chunks;
6. Place the powder on a plate, and coat each rib piece with it. Place ribs on top of sweet potatoes. Add some water on ribs;
7. When the water boils in the steamer, steam the ribs for 45 minutes to 1 hour. Serve.
