Hot and Sour Soup 酸辣汤

3 cups chicken or vegetable stock
1 dried or fresh shiitake mushrooms
2 dried wood ear mushrooms
A few dried lily flowers (optional)
A few slices of bamboo shoots ( canned or fresh)
1 oz firm or regular tofu
1 beaten egg
1/2 tbsp Dark soy sauce
1/2 tbsp Light soy sauce
Corn starch slurry (1 tbsp starch mixed with 2 tbsp water)
1 tbsp Dark vinegar
White pepper powder
Chopped green onions and cilantro

1. Soak dried ingredients in warm water about 1 hour;
2. Cut vegetables and tofu into thin strips;
3. Bring stock to boil, and add dark and light soy sauce;
4. Add vegetables and tofu, and cook about 3 minutes;
5. Add some salt to taste, and corn starch slurry to thicken;
6. Drizzle a beaten egg in a few times;
7. Add vinegar and white pepper powder to your taste;
8. Garnish with green onions and cilantro.
