Cold Noodles with Green Onion Oil 葱油凉面

Green onions are always must-buy when I do grocery shopping. They add flavor to dishes and are great for garnish. Green onion oil is easy to make, and it smells and tastes great in noodles or salad. You may make a bigger batch by doubling oil and green onions. It can be stored in refrigerator for days. Enjoy this cold noodles, and hope they cool you off 🙂

4 stalks green onions, cut into 3″ pieces
1/4 cucumber, peeled and cut into thin slivers
4 oz noodles, fresh, dried or thin pasta
1/4 cup vegetable oil
Light soy sauce
Rice vinegar or dark
Sugar

To make green onion oil:
1. Heat up pan to medium (or medium low) heat, add white part of green onions, and fry about 2 minutes while stirring occasionally;
2. Add green parts, and fry about 5 minutes while stirring occasionally;
3. Strain the oil to a bowl and cool off in fridge.

Make noodles:
1. Cook noodles to al dente;
2. Place noodles into a ice water bowl for immediate cooling off;
3. Strain the noodles to get rid of excess water;
4. To dress noodles in a bowl, add green onion oil, soy sauce, vinegar, and sugar, and toss together;
5. Top with cucumber, chopped green onions, and pieces of fried green onions. Serve.

Serving: 1
