Fried rice can be made healthy:
1 whole egg
4 egg whites
5 cups cooked rice
1 cup blanched carrots
1 cup blanched peas
1 cup green onions
2 tablespoons Canola oil
Salt and white pepper to taste
1. Beat the eggs in a bowl
2. Heat the oil in a pan. When the oil is hot, pour the beaten eggs into the pan and let it set. Stir and break up the eggs.
3. Add rice into the pan, and mix with the eggs. Stir fry until it’s heated through.
4. Add peas, carrots and green onions and mix together.
5. Add salt (or soy sauce) and white pepper to taste. Stir fry about 2 minutes and serve.
Healthy tip: instead of all whole eggs, use 1 whole egg and 4 egg whites.
